بررسی سطوح فعالیت آنزیم های دفاعی و پلی فنل ها در ارقام سیب مقاوم و حساس به (Penicillium expansum)

پولی فنل ها و میزان فعالیت 4 آنزیم دفاعی شامل پراکسیداز، پلی فنل اکسیداز، کاتالاز و سوپراکسید دیسموتاز و غلظت پلی فنل ها در ارقام حساس (مشهد) و مقاوم (گرانی اسمیت) سیب به (Penicillium expansum) بررسی شد. اندازهگیری آنزیمها در روزهای اول، سوم، پنجم و هفتم پس از مایه زنی قارچ در قسمت فوقانی میوه انجام شد. نتایج نشان داد که در روزهای بررسی، میزان فعالیت آنزیم ها و غلظت پلی فنل ها در رقم مقاوم بیش از حساس بود (P<0.01). در هر دو رقم، فعالیت آنزیمها در میوه های مایه زنی شده بیش از مایه زنی نشده بود. بیشترین میزان آنزیمهای کاتالاز، پراکسیداز، پلی فنل اکسیداز و سوپراکسید دیسموتاز در رقم مقاوم در روزهای سوم، هفتم، هفتم و سوم و در رقم حساس در روزهای سوم، هفتم، پنجم و سوم مشاهده شد.
Investigation on the level of polyphenols and defense-related enzymes in resistant and susceptible apple cultivars to blue mold (Penicillium expansum)

Polyphenol and activity of four defensive enzymes including peroxidase, catalase, polyphenol oxidase and superoxide dismutase was investigated in apple cultivars resistant (Granny smith) and susceptible (Mashhad) to (Penicillum expansum). Enzymes activity were determined in first, second, fifth and seventh days after inoculation of the fungus Based on the result, activity of all examined enzymes and polyphenol concentration were generally higher in resistant than susceptible cultivar (P<0.01). In both cultivars, the enzymes actiovities was higher in inoculated than non-inoculated fruits. In resistant cultivar, the highest activities of catalse, peroxidase, polyphenol oxisae and superoxide dismutase was detected in third, seventh, seventh and third days after inoculation, respectively and in susceptible, in third, seventh, fifth and third days, respsectively.
